Try these whiskey-infused cupcakes for your next grown-up get-together! Style Girl Katie made them for her husband Luke's birthday. Let's just say they were a big hit with guys and gals alike.
Yield: 1 dozen cupcakes
Ingredients:
1/2 cup of whiskey
6 tablespoons of softened butter
1/2 teaspoon vanilla extract
2 large eggs
1/4 cup of dark chocolate chips
1 1/2 cups all-purpose white flour
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
1 1/3 cups of white granulated sugar
Directions:
1. Preheat oven to 350 degrees F and lightly grease cupcake trays.
2. Bring whiskey to a rolling boil in a small saucepan, then remove it from the heat before adding the dark chocolate chips to the liquid, stirring until it is a rich melted chocolate mixture.
3. In a mixing bowl, combine the flour, cocoa, baking powder and salt, stirring until fully blended.
4. In a separate bowl, mix together the sugar and butter at medium speed. Once well combined, add the vanilla and eggs.
5. Combine dry ingredients and whiskey-chocolate blend with the sugar mixture bowl, beating at low speed just until fully combined.
6. Pour into cupcake trays and bake at 350 degrees F for 12 to 15 minutes (or until a toothpick comes out clean). Once baked, allow them to cool before frosting. (We recommend a simple vanilla buttercream frosting).
