I gave these nuts and local raw honey as a Christmas gift at work, and they were a big hit (and, while they aren’t totally “healthy,” they are a great alternative to other junk food)!
The best part about these nuts is that you probably have everything you need to make them. I am tempted to say these could be the perfect snow day snack, but I think being stuck inside all day with these delicious nuts could be dangerous. Seriously, I have very little self control when it comes to these, a few nuts turns into handfuls easily.
Honey Roasted Almonds
Ingredients:
2 cups whole, raw almonds (I’ve tried this with pecans, and it was equally delicious, so I assume, really any nut will do)
1/4 cup honey (I used local raw honey)
2 tablespoons butter
kosher salt
1 cup turbinado sugar (“sugar in the raw”)
Directions:
- Preheat oven to 350°.
- Spread almonds on a baking sheet. Roast in a 350° oven for about 10 minutes, stirring after about 7 minutes.
- Over medium heat in a medium saucepan, bring honey and butter to a boil. Reduce heat to medium low and simmer 2 minutes, stirring occasionally.
- Add almonds; simmer and stir 2 minutes.
- Using a slotted spoon, transfer almonds to a baking sheet lined with parchment paper or sprayed with non-stick cooking spray. Spread in single layer. Sprinkle with kosher salt. Cool slightly.
- Pour the sugar into a large Ziplock bag. Add the almonds, secure bag tightly, and shake until well coated with sugar.
